The Year of the Rat symbolises wealth and surplus and bountiful opportunities. To usher in the Year of the Rat, the culinary team has crafted celebratory set and à la carte menus showcasing nostalgic dishes of Teochew, Hokkien, Cantonese and Hainanese heritage with influences from Singapore, Malaysia, Thailand and Indonesia. Set menus (Wealth, Success, Happiness, Fortune, Prosperous and Treasure) range from S$258++ for 4 diners to S$1498++ for 10 diners.
The most memorable dish which I tried at Famous Treasure is the NEW Shunde Yu Sheng 顺德鱼生 which is available all year round. Unlike the usual ‘Lo Hei’ Yu Sheng, this is a refined version of the prosperity salad. Originating from Guangdong province in China, the Shunde Yu Sheng 顺德鱼生comprises of a platter of fresh, raw Hamachi (Japanese amberjack) served with thinly shredded spring onion, onion, turnip ginger, garlic, salt, soya sauce, sesame seeds and sesame oil. What I like is that you can select the condiments and seasoning and adjust it to your liking. Priced at S$118++ for Small and S$180++ for Large, the Shunde Yu Sheng 顺德鱼生 requires an advance order of three days. For takeaway, it is priced at S$118+ for Small and S$180+ for Large.
If you prefer the traditional ‘Lo Hei’ Yu Sheng, you’ll be pleased to know that the Prosperity Salmon Yu Sheng 发财三文鱼捞生 (S$88++ for Small and S$128++ for Large) and Prosperity Abalone and Salmon Yu Sheng 发财三文鱼鲍鱼捞生 (S$128++ for Small and S$158++ for Large) are also available during the CNY season. For takeaway, it is priced at S$128+ for Small and S$158+ for Large.
Another creation which won my heart was the nutritious Double-boiled Chicken Soup with Morel Mushroom and Peach Gum羊肚菌桃胶炖鸡汤 (S$68++ for Medium and S$138++ for Large), this new à la carte dish brims with wholesome goodness with tender whole chicken, chewy morel mushroom and gelatinous peach gum. A delicious blend of sweet, savoury and herbal flavours, it is nourishing to the body and comforting to the senses.
Another new addition to Famous Treasure’s bevy of CNY creations is the Wok-fried Prawn Ball in Traditional “Nanyang” Style 南洋风味炒虾球 (Small S$36++, Medium S$54++, Large S$72++) A piquant prawn dish with hints of lemongrass and rendang, accented with edamame and served on thinly sliced cucumber, it teases the palate with its unique flavours which has a mix of Singaporean Malay and Thai influences.
Those who like lighter flavours will enjoy the Wok-fried Prawn Ball with Spring Onion Sauce 雀巢碧绿炒虾球 (Small S$36++, Medium S$54++, Large S$72++). Consisting of succulent prawn balls paired with refreshing and appetising sauce, it has a refreshing taste.
A signature dish which is also available on the CNY set and à la carte menus, the Roasted Irish “Silver Hill” Duck 爱尔兰金牌烧肥鸭 (S$58++ for Half and S$108++ for Whole) is an all-time favourite creation. Roasted to perfection, the skin is crispy while the meat is succulent and tender. For takeaway, it is priced at S$108+ for a whole duck. It is also available in the Success, Happiness and Fortune Set Menus.
Fish is an essential dish in a CNY meal as it signifies abundance year after year (年年有余). Topped with spring onion, ginger and chilli, the Steamed Marble Goby Fisherman Style 渔夫蒸笋壳 (available in CNY Fortune Set Menu) is very fresh with a delicate texture.
A CNY feast is never complete without the iconic Pen Cai, translated as a pot of treasures. The traditional Pen Cai or Poon Choy (in Cantonese) is generously filled with premium ingredients for the family to enjoy. Famous Treasure’s rendition named as Prosperity Fortune Treasure Pot 发财盆菜 (S$388++ for Small, S$588++ for Large) brims with abalone, sea cucumber, fish maw, fresh scallops, dried scallops, prawns, dried oysters, mushrooms, broccoli, black moss and cabbage in a rich, aromatic and flavourful stock.
