Auspicious CNY Creations at Famous Kitchen

The Year of the Ox symbolises positivity, hope and new beginnings. To usher in this auspicious year, the culinary team at Famous Kitchen has curated prosperous set and à la carte menus featuring sumptuous Nanyang creations to pamper your palate. Prosperous Set Menus include Sapphire, Jade, Crystal and Diamond. Whisky aficionados can elevate their dining experience with Famous Kitchen's Auchentoshan Three Wood Single Malt Scotch Whisky Pairing Set Menus.


I had the pleasure of sampling the Jade Set B CNY Set Menu for 6 diners ($498++) at award-winning Michelin recommended restaurant, Famous Kitchen, located at 54 Sembawang Road, Hong Heng Mansions, #01-01, Singapore 77985. This video features celebratory creations from Jade Set B.


The Prosperity Salmon 'Yu Sheng' (鸿运三文鱼捞生) was very refreshing with a harmonious balance of sweet, savoury and crunchy flavours. The sweetness from the plum sauce and the fresh salmon coupled with the crunchy prosperity golden crackers brought a burst of delight in my mouth. The Yu Sheng is a must-have for any CNY celebration as it is believed to bring in good health, good luck, prosperity and happiness for the New Year.


The Braised Shark's Fin with Crabmeat & Dried Scallop Soup (干贝蟹肉鱼翅羹) was served piping hot and brimmed with luxurious ingredients including shark's fin, crabmeat and dried scallop. Rich and robust, this nourishing soup abounds with umami flavours, making every mouthful very gratifying. Add a dash of vinegar and pepper for the extra oomph.


Fish is a vital part of a CNY meal as it symoblises surplus year after year (年年有余). The Hong Kong Style Steamed 'Live' Marble Goby with Superior Soya Sauce (港蒸 ‘活’笋壳鱼) captivated me with its freshness and delicate texture. Sliced ginger enhanced the flavour of the marble goby.


The Braised Cucumber with Fish Maw & Mushroom (红烧花菇海参鱼鳔)was executed well and the sea cucumber and fish maw were tasty and succulent while the mushrooms were juicy. What impressed me was the flavourful sauce which made this auspicious creation divine.


The Double Boiled Herbs 'Kampung' Chicken ( 御膳药材炖甘榜鸡) was the highlight of the meal. Double-boiled in traditional Cantonese style, it was tender and juicy with gentle hints of herbs.


Drizzled with caramelised sweet sauce, the Wok-Fried Tiger Prawns with Tea Leaf (茶香焗老虎虾) was delightful with the gentle aroma of tea leaves. The prawns were bouncy and fresh too.


Noodles symbolise longevity. The Stir-Fried E-Fu Noodles with Straw Mushroom (锅烧草菇伊面) is a popular dish for birthdays, weddings, Chinese New Year and other special occasions. Infused with soy sauce and savoury stock, the noodles were cooked to the right consistency and absorbed the flavours of the stock.


For a sweet finale, conclude with the all-time favourite dessert, Water Chestnut with Snow Fungus & Egg White (百花雪茸马蹄露). This nutritious dessert is believed to contain healing and rejuvenating properties. The snow fungus helps to nourish the lungs and throat and rejuvenate the skin, therefore it is the perfect dessert to round up your CNY meal.
