Helmed by Japanese Chef, Tomine Nobuaki, every creation is a unique showcase of dexterity, providing a heavenly treat for the senses. The talented and humble chef has 17 years of culinary experience under his belt, including working in the kitchens of 2-star Michelin restaurant in the United States, Gary Danko and the signature 1-star Michelin restaurant at The Ritz-Carlton Osaka, La Baie.
What I like best about the restaurant is the show kitchen which features Chef Tomine dazzling diners with his adroit culinary and food styling skills. With a charming, down-to-earth and unassuming personality, he believes in offering diners natural and healthy food prepared using fresh, sustainable and premium ingredients.
Our gastronomic voyage commenced with the Foie Gras Terrine which comprises of slow cooked French Duck Foie Gras Terrine accompanied with apricot jam, caramelised onion and watercress. The foie gras is marinated with whiskey and cooked at 55 degrees for approximately 40 minutes to an hour. The ingredients are exquisitely assembled, providing a symphony for the senses.
The Chef’s Special Dragon & Fish is another standout item, consisting of tempura battered garoupa in a delightful dragonfruit and cream cheese sauce. The light, crisp batter lends an irresistible crunch to the garoupa. When accompanied with the tangy dragonfruit sauce, it is simply delicious.
Savoury Bouillabaisse
Seafood aficionados will love the Bouillabaisse which abounds with treasures of the sea such as fish of the day, clam, green mussel and red prawn in a rich and flavourful Mediterranean stock meticulously prepared using fish bones.
The Summer Vegetable Risotto is a refreshing summer creation featuring Japanese Koshihikari rice, parmigiano and ratatouille – a tantalising vegetable stew cooked with eggplant, zucchini, sweet peppers and ripe summer tomatoes. The flavours are well balanced, offering a perfect harmony of different flavours and textures.
To conclude your meal on a sensational note, I would recommend the Magical Banana which is an ambrosial combination of caramelised banana, flourless brownies and vanilla ice cream topped with espresso.
