Ellenborough Market Café at Swissôtel Merchant Court, Singapore has garnered a niche in the hearts of many diners for its sumptuous buffet comprising perennial Peranakan and local favourites. Over the past two decades, the popular restaurant has cemented a reputation for being one of the best buffets in Singapore.
During this Chinese New Year season, award-winning Executive Chef, Louis Tay and his stellar culinary team have specially curated two prosperous set menus priced at $788++ (7-course) and $988++ (8-course) consisting of traditional festive delights, auspicious creations and ambrosial culinary treats. The culinary team has paintakingly crafted eight different variations of the 'Dog' Yu Sheng for your selection. The customised “Dog” Yu Sheng is available at a top up of $20 nett.

For a start, toss to good health, success, prosperity and happiness with the Salmon Yu Sheng meticulously assembled with pickled melon, cucumber, leek, sour ginger, sweetened ginger, lime, winter gourd, crushed peanuts, sesame seeds, pomelo, shredded carrot, white radish, green radish and purple cabbage. Fresh salmon, lemon and plum sauce and pok chui (prosperity crackers) are served on the side for diners to add to their Yu Sheng during the Lo Hei session.

Double-boiled Fish Maw with Dried Scallop and Cordycep Flower
The second course, Double-boiled Fish Maw with Dried Scallop and Cordycep Flower is one of my favourites from the Prosperity Set Menu. This nourishing soup brims with generous servings of fish maw and dried scallop. The sweetness of the dried scallops coupled with the slight bitterness of the Cordycep flower provide a delicate balance of flavours, which is tasty and comforting to the senses at the same time.

The Imperial Herbal Chicken is another creation which won my heart. Immersed in a flavourful herbal broth, the chicken is cooked to tender perfection.

Hong Kong Style Fried Garoupa
The Hong Kong Style Fried Garoupa is another well received dish as the Chinese believes that eating fish symbolises abundance and prosperity throughout the entire year. The skin is fried to the right degree of crispness and the inside of the fish is tender and delicate. The taste is enhanced with the addition of crispy pork belly, mushrooms and red and green bell peppers.

Braised Abalone with Sea Cucumber with Australian Broccoli
The Braised Abalone with Sea Cucumber with Australian Broccoli is a dish that you often see at Chinese banquets. The abalone is cooked to perfection, resulting in a succulent texture without being too rubbery. The sea cucumber is also delicious, retaining a firm bite and the Australian broccoli makes the dish complete, adding some greens to the overall presentation. The rich sauce is also a perfect balance of sweet and savoury, making it an extremely palatable dish.

Fried Glutinous Rice wrapped in Lotus Leaf is a quintessential Chinese New Year dish which represents harmony and unity in the family. Ellenborough Market Café’s rendition hits the right notes with ingredients such as Lap Cheong (Chinese sausage), pork belly and salted egg yolk. The aroma is irresistible the minute you unwrap the lotus leaf. The rice is executed to a pleasant al dente texture and the lotus leaf retains the flavours and fragrance of the ingredients. Each grain is cooked till it is firm, separate and fluffy.

Prosperity Buffet Highlights
The Prosperity Set Menus ($988++ and $788++) are available from now till 2 March 2018 at Ellenborough Market Café. Diners who prefer buffet can opt for the Prosperity Buffet which is also available till 2 March. It is $68++ per person for lunch and $80++ per person for dinner. Child aged 6 to 12 years old enjoys half price.
